“Does this have nuts in it?” Friday night, table six, the chef is plating, and the server needs the answer now. It is somewhere: in a folder, in an old spreadsheet, or in the head of the person who is off tonight.

Tout Compris keeps every dish checked against the 14 allergens, derives them from your own recipes, and prints a customer sheet that never says “free from” unless someone confirmed it. Telling customers about the 14 allergens is a legal duty for anyone serving food. This makes it a habit instead of a panic.

The matrix

One matrix: every dish against the 14 allergens

A grid with your dishes down the side and the 14 allergens across the top. In each cell you choose: contains (), may contain () for cross-contamination, or free from (). A cell nobody has looked at stays a dotted question mark. That distinction is exactly what an inspector wants to see: “we checked this and it is free from” is not the same as “not checked yet”.

You can see where you stand at a glance. Above the grid the app counts how many dishes are fully checked. A half-done dish carries an amber 9/14, a finished one a green tick.
One button for the boring part. “Mark as checked” fills in everything still open for that dish: from the recipe where there is one, otherwise as free from. What you set yourself stays as it is.

Recipes

Your recipe checks your work

Every ingredient in your library carries its own allergens. If a dish is marked “free from milk” while the cream sauce in its recipe contains milk, that cell gets an amber border with the ingredient’s name, and the dish a red “check recipe” tag. It does not count as checked until you resolve it. Change a recipe or an ingredient later and the warning appears or disappears on its own.

Only that direction is flagged. Declaring more than the recipe, for example “may contain” because of a shared fryer, is your judgement about your kitchen and is left alone.

Ingredients the app created itself while scanning a supplier invoice are marked “to review” until someone has set their allergens. Every dish using such an ingredient shows it too.

The customer sheet

A customer sheet that always picks the safer answer for the guest.

From the matrix the app produces a clean allergen sheet for the pass or the counter, filterable by category and printable. Two safety rules are built in.

Rule 1
Not checked is not “free from”. A dish with no matrix entry and no recipe prints a question mark with “ask staff”. A dish nobody looked at is never presented to a guest as clean.
Rule 2
When in doubt, the more cautious of the two. If your entry and your recipe disagree, the sheet prints the allergen as present. The matrix keeps your entry exactly as you typed it; the sheet never understates towards the guest.
Tonight
Tonight’s allergies are in the briefing. When a guest notes an allergy while booking, it appears in that day’s service briefing next to the sold-out dishes and the specials. Front of house reads it before service starts, not halfway through the mains.

FAQ

Questions owners ask about allergens

Do I have to click fourteen boxes for every dish?
No. A dish with a recipe takes one click: "Mark as checked" takes the allergens over from its ingredients. A dish with no allergens costs you that same one click. Only what you want to declare differently, such as "may contain" from cross-contamination, you set by hand.
What if a dish has not been checked yet?
It shows as "not checked" in the matrix and the customer sheet prints a question mark with "ask staff". It is never silently presented as free from everything.
How is cross-contamination handled?
That is what the "may contain" state (◑) is for, for a shared fryer or a shared prep surface. It is your judgement about your kitchen; the app never removes it for you.
Does it work with my recipes and costings?
Yes. They are the same ingredients and the same recipes as in your dish costing. Set an ingredient’s allergens right once and every dish using it is right.
Does it cover Natasha’s Law?
Partly, and it is worth being precise. Natasha’s Law is about food packed on your premises for direct sale, which needs a full ingredient label on the pack with the allergens emphasised. Tout Compris keeps the allergen record per dish and prints the customer sheet and the matrix; it does not print pack labels. For food served at the table, the duty is to tell customers about the 14 allergens, and that is what the sheet and the matrix are for.
Is this enough for the EHO?
No inspector certifies software. The law asks that you inform customers correctly about the 14 allergens and can show how you know. Tout Compris keeps that information per dish, shows what has not been checked yet, and prints the matrix as part of your food safety records. What you enter remains your responsibility.
